MY HOMEMADE SUPERFOOD MUESLI

Do you have a go-to breakfast staple which you just can´t live without? Well, aside from my trusted avo and eggs, I am obsessed with my homemade superfood muesli, which is pretty darn good (if I can say so myself). Not only is it bursting with nutrition (it ain´t called superfood for nothing!), but it´s the ideal breakfast staple when you´re on the go, and you have limited time in the mornings – as it´s already prepared. And the actual making of the muesli, takes less than 5 minutes.

I don´t know about you, but I always wake up craving something sweet first thing in the morning. No wonder really, as your body has been fasting all night, so your blood sugar level is pretty low. But instead of diving straight into a Pain au chocolat or toast with jam (which will only spike your sugar level – then crash them right down again) – I love to fuel my body with a meal which will not only fill me right up and keep me going until lunch time – but also be good for my belly and body.

In terms of ingredients, you can really just play around with whatever your favourite flavours and muesli combos are. As this is the ´superfood` version – this one in particular is bursting with various seeds and nuts, but you can just alter and adapt as you like – simple or complex.

MY HOMEMADE SUPERFOOD MUESLI

INGREDIENTS
(fills up a large glass mason jar)

Organic Oats / Organic Quinoa Pops (I get mine from Wholefoods) / Mixed Raw Nuts (I like Almonds, Hazelnuts, Cashew Nuts, Pecan Nuts, Walnuts) / Flax Seeds / Linseeds / Chia Seeds / Hemp Seeds / Pumpkin Seeds / Dried Fruit (I like dried Apricot, Medjool Dates & Goji Berries) / Coconut Flakes 

DIRECTIONS 

Chop up the nuts and dried fruits, and pour all the ingredients into a large mixing bowl. I am not one for exact measurements when it comes to this muesli; I just pour the ingredients together, making sure it will (roughly) fit into my glass mason jar.

Sometimes I might want less fruit or less nuts, so I just adjust it accordingly. Once all the ingredients are in the bowl, make sure you thoroughly stir and mix it, so everything is blended (my pet hate is having all the chunkier ingredients either at the top or the bottom!).

Then pour it all into your mason jar! I love having mine with either Oat Milk or a creamy Almond Milk, then if I´m in need of an extra energy boost, I chop up a half a banana. Delicious and simples!
